Leftover Khichdi Pancake

This post is the continuation of the use of leftover Khichdi. In the previous post I have shared the recipe for Leftover Khichdi Muffins and, in this post I am sharing the recipe for making savoury pancakes using the leftover Khichdi.

These pancakes are very soft, delicious and I have really enjoyed them with cucumber chutney (so all in all a total healthy combination 🙂 )


The ingredients for Leftover Khichdi Pancakes are :
1. Leftover Khichdi : 1 cup
2. Whole wheat flour : 1/2 cup
3. Roasted Cumin Powder (jeera powder) : 1/4 tsp
4. Coriander Leaves : 1 Tbsp
5. Salt : to taste (as khichdi also has salt)
6. Water : as needed

Method :

Take a big bowl; put leftover Khichdi in it and mash it with a spoon.

Now add whole wheat flour, roasted cumin powder, salt, coriander leaves and mix well.

Add water to make a smooth and flowing batter.

Heat a non-stick skillet / tawa, and pour a ladle of this batter; there is no need to spread the batter. Let it cook for a minute. You will see the bubbles, and the colour of this pancake will start to change.

Then flip the pancake and let it cook for another minute. It is done when it turns golden brown in colour.

Serve these healthy Leftover Khichdi Pancakes hot with Cucumber Chutney, Coriander Chutney, Curry Leaves Chutney or Ketchup.
