Cucumber Chutney

People mostly use cucumber in salads and/or in raita. I however make a dry cucumber curry which I have already posted earlier. Needless to say, this chutney is a bit different from the other dips as it is real healthy and flavourful. Cucumber is very nutritious vegetable – the Potassium richness in cucumber helps in regulating the blood pressure levels. Cucumber helps to reduce cholesterol, promotes digestion, rehydrates and remineralized the body. Cucumber is also eaten raw during summer as it has a cooling effect and helps in regulating the body temperature.

The ingredients for Cucumber Chutney are :

  1. Cucumber (Kheera) : 1/2 (peeled and cut into cubes)
  2. Peanuts : 2 Tbsp (dry roasted)
  3. Green chilli : 2 (chopped)
  4. Coriander Leaves : 2 Tbsp
  5. Yogurt : 2 Tbsp
  6. Oil : 1 tsp
  7. Lemon juice : 1 Tbsp
  8. Salt : to taste

Method :

Heat oil in a pan, put green chilli and sauté for few seconds; add cucumber and cook covered for 2 minutes.

Switch off the flame and remove the cucumber and green chilli from the pan and let it cool down.

Take a mixer jar. Add the cooked cucumber plus chilli, peanuts, yogurt, coriander leaves, lemon juice, salt and grind it.

Grind it till it becomes smooth (no need to add water). Remove from the mixer jar and place it in a bowl.

Your healthy, tasty and different Cucumber Chutney is ready to be served. You can enjoy this chutneywith any snack, Parantha or, use it as a dip with your food of choice.

  • You may adjust spices according to your taste buds.
  • You can also add onion and/or garlic to this chutney.
  • You can store this chutney in refrigerator for 7-10 days.
