Courgette Coconut Laddu

Let’s admit – how can you deny a good laddu on this lovely occasion of Diwali 🙂  With strong belief in this premise, I prepared these lovely albeit slightly different (by Indian standards) Courgette/Zucchini Coconut laddus as part of my Diwali celebrations.

I offered them to my family and friends after Diwali puja (prayers), and luckily everyone took an instant liking. Furthermore when I disclosed that these were actually Courgette (Zucchini) Coconut laddus, they were all pleasantly surprised on how I had turned the Indian laddu into a great nutritious/healthy dessert. These words coming from my husband who is not a fan of Courgette (Zucchini) really sounded music to my ears 🙂

At this point, I would like to be honest in declaring that this is actually my dear friend Shipra’s recipe, who made these laddus sometime ago. I liked her recipe, and the clicks were so irresistible that I couldn’t stop myself in taking the plunge – thanks Shipra !

For the benefit of everyone, Courgette can be termed as a near cousin of the Indian Cucumber. It is low in saturated fats and Sodium, and very low in cholesterol. It is also a good source of protein, vitamins (vitamin A,B &C),  and minerals. Courgette is also known as Zucchini in some parts of the world. If you are trying to lose weight then you should have Courgette as number one on your diet list.

The ingredients for making Courgette Coconut Laddus are :

  1. Courgettes/Zucchini : 2 (peeled and grated)
  2. Sugar : 1/2 cup
  3. Clarified butter (ghee) : 1/4 cup
  4. Cardamom (Elaichi) powder  : 1/2 tsp
  5. Coconut : 1 cup (grated)

Method:

Heat clarified butter in a pan. Now add grated courgettes and roast them for around 15-20 minutes on medium flame so that the water released from courgettes gets soaked completely. Keep stirring till the courgettes become soft and mushy and water is soaked completely.

Turn off the heat, remove the pan and let it cool down a little. Then add coconut, sugar, cardamom powder and mix well.

Take a small portion of this mixture in your hands and shape them as balls. Coat these balls in grated coconut and garnish them with crushed almonds.

Your real healthy, tasty Courgette/Zucchini Coconut Laddus are ready to be devoured. Enjoy this quick, and easy dessert on any occasion!
