I have seen/observed that many people don’t like Spinach – my hubby being one such example 😉
Green vegetables should be a part of our meal but it seems hard to get some people to have spinach – especially men n kids 😉 For all these folks, I have today prepared Spinach Koftas – no, these are not the regular fried koftas. This is the baked version from my side – I mostly try to avoid deep frying. These green beauties (spinach kofta) have resulted in the delicious Baked Palak Kofta Curry !!
I have not added potato or paneer in them as I wanted pure spinach koftas (without adding any carbs to be honest). This curry has come out really tasty – proof of the pudding being the ask from my hubby to make it more often 🙂
This is another Healthy one that comes with full taste and no guilt !!
The ingredients for Spinach Kofta are:
1. Fresh spinach : 450gm
2. Onion : 1 (chopped)
3. Garlic : 1 tsp (chopped)
4. Green Chilli : 2 (chopped)
5. Ginger : 1/2 tsp
6. Red Chilli Powder : 1/2 tsp
7. Asafoetida : a pinch
8. Salt : to taste
9. Chickpea Flour (Gramflour/Besan) : 1/2 cup
10. Oil : 1 tsp
Preheat the oven for 15 min on 200°C.
Boil the fresh spinach and squeeze out all the water. Now put the squeezed spinach in a big bowl, chopped it and add onion, garlic, ginger, green chillies, red chilli powder, asafoetida, salt and mix it well. Then add chickpea flour n oil and again mix properly. Now make around 18-20 balls from this.
Grease the baking tray with oil. Put these spinach balls on the baking tray, keeping some space in between. Bake these spinach balls for 18-20 min on 180c; flip the balls after 10 min.
Your baked spinach koftas are ready !
The ingredients for the Gravy are :
1. Onion : 2 (chopped)
2. Garlic : 1 Tbsp (chopped)
3. Tomato : 1 (chopped)
4. Ginger : 1 Tbsp
5. Green Chilli: 2 (chopped)
6. Yogurt : 3 Tbsp
7. Cumin seeds : 1/2 tsp
8. Red Chilli Powder : 1/2 tsp
9. Coriander Powder : 2 tsp
10. Turmeric Powder : 1/2 tsp
11. Garam Masala : 1/2 tsp
12. Milk : 1/2 cup
13. Oil : 1-2 Tbsp
14. Fresh Coriander (for garnishing)
Heat oil in a pan and temper with cumin seeds. Then add onion and sauté it till it become light brown. Then add garlic and sauté for another 2 min.
Now add coriander powder, red chilli powder n turmeric powder and sauté for a min. Now add tomato and yogurt and continuously stir/cook for couple of minutes.
Add 3 cups of water, and the salt; cover the pan and cook for 8-10 min.
Add ginger, green chilli and garam masala – cook for further couple of minutes. Once half of the water gets evaporated from the gravy, add milk while stirring continuously for 2 min so that the milk blends in well with the gravy. Cook the gravy for further 8-10 min while stirring in between.
Add 1 cup water and bring it to boil. Turn off the heat and add the spinach koftas in it and cover it. Your Baked Spinach Kofta Curry is ready to serve !!
Garnish this healthy, nutritious n delicious curry with coriander leaves – I could not garnish my kofta curry as I didn’t had coriander leaves that time 😦
Insider Tips / Finer Points :
You can add boiled potatoes or grated paneer to these spinach koftas.
You can deep fry these spinach koftas instead of baking. Deep fry them on medium flame till they turn light brown.
You can enjoy these spinach koftas (without gravy) as a starter with ketchup or mayonnaise !
I like to use less oil but if you want you can use more oil in the gravy.
I personally don’t like to use cream in any of my dishes – due to health reason; but you may use cream instead of milk towards the end, if you want.
Once the koftas get soaked, gravy will become thicker; so add more water to achieve the desired consistency.
