Poha came into my breakfast life from my marriage. I know and accept that Poha in its original form itself is a light and healthy. But I got really bored eating the regular Poha twice a week that I desperately wanted to experiment. And then I came across this super-healthy recipe.
Baked Poha is a more delicious and healthy version of the original Poha recipe. It is a much simpler recipe, completely different in taste / colour from the regular Poha. My health-freak hubby n my little angel loves it!
The ingredients for Baked Poha are:
1. Poha : 1 1/2 cup
2. Yogurt : 6Tbsp
3. Semolina : 1Tbsp
4. Sugar : 1tsp
5. Green chilli : 2
6. Lemon juice : 2tsp
7. Fresh Coriander : 2Tbsp
8. Salt : to taste
The ingredients for Tempering are :
1. Oil : 2tsp
2. Mustard seeds (Rye) : 1/2 tsp
3. Asafoetida (Hing) : a pinch
Preheat the oven on 200°C for 15 min.
Wash the Poha in running water and add green chilli, semolina, coriander, lemon juice, sugar, salt, yogurt. Mix them well.
Grease a baking dish and put this mixture in the baking dish evenly.
For tempering : Heat the oil in a bowl in microwave for 30-45 seconds; then add mustard seed, asafoetida and then again heat it in microwave it for 30-45 seconds till they crackle.
Sprinkle this tempering over the Poha mixture. Now bake this Poha in preheated oven at 200°C for 12-15 minutes.
Garnish with fresh coriander and pomegranate seeds – enjoy the healthy baked Poha !!
