After making the Rasogullas, I didn’t wanted to discard that “protein and calcium rich” whey. So I thought why not make a soup of it – does it sounds wierd? Well, it’s a very quick, healthy recipe and uses only 3 ingredients. Believe me – the soup is very tangy, perfect bit spicy n refreshing.
Perhaps I should clarify as to what is whey – when we curdle the milk using lemon or vinegar, we get a milk mass known as Chenna or Paneer and, a liquid. This liquid is called Whey. Generally people use only the paneer/chenna and, they discard the whey liquid. I personally think it is a waste of this highly nutritious, calcium/protein rich liquid.
Hopefully after reading my recipe you guys will try it and like it.
The ingredients for the Whey Soup are :
- Whey : 3 cups
- Green chillies : 3
- Oil : 1/4 tsp
- Cumin seeds : 1/2 tsp
- Curry leaves : 8-10
- Salt : as per taste
- Black Pepper : to taste (optional)
Switch on the gas and put oil in a pan; add the cumin seeds to the oil. Add the curry leaves when cumin seeds crackle. Now sauté for some seconds.
Then add green chillies and continue sauté for some more seconds. Now add whey and salt and, let it boil. After a boil switch off the flame.
The healthy whey soup is ready!
